Homemade pita bread
Homemade pita bread is something special for me. It is a delicious snack that comes in many different varieties, and always reminds me of my yaya. My yaya would whip up any type of dough you can imagine, in no time, and it was always so comforting and delicious.
I recall similar memories being at home with my mother; every time I’d be hungry or peckish, she had the ability to make something tasty out of nothing and especially anything with dough. She has this ability to make any type of dough instantly, which was and is always tasting amazing!
My favorite pita bread from yaya has to be her tiganopsomo (fried bread) that she would fry up and drizzle with honey. My moms favorite I can simply not name. All the varieties she comes up with are all so amazing! Soda bread, fluffy buns, olive bread, her quick focaccia and not to forget her tignites. I will ask her to slowly share these recipes with us on her blogs.
In my previous blog I introduced Rhiannon. Together we made multiple recipes and combined some of our dishes. She asked me if I had a great recipe for fluffy pita bread. Since pita bread is something I love and as a matter of fact had experimented with the whole winter, I was very eager to share my recipe with her.
The recipe that follows is inspired by @foodbymaria. She has an amazing take on Greek recipes and she inspires me with her twists on the classics. Together with Rhiannon, we made fluffy pita bread and stuffed the pita bread with 3 different amazing fillings.
Stuffing one - Cheese pie filling of greek cheese
Stuffing two - Tomato pie filling
Stuffing three - spanakopita filling
While we were preparing these pita breads with Rhiannon, she was telling me about how in New zealand they love making dips. That having fresh veggies chips and dips with your food is actually somewhat of a cultural thing. So it should not come as a surprise that we made a beautiful dip and some home made filo chips to go with our beautiful pitas.

Ingredients
Instructions
1. Mix all the ingredients (preferably with your hands) until you have a soft dough, then let it rest for 30 minutes.
2. Separate the dough in 6 small balls and flatten each ball with a roller.
3. Then you add your filling to each of the flattened balls.
4. Fold the dough around the filling, and flatten the ball again.
5. Bake the bread in a frying pan with olive oil on low heat until they turn golden brown. Do not forget to turn the pita often!
6. Once golden brown they are ready to be served!

Suggested fillings:
Filling 1: Cheese pie filling of Greek cheese (mix well the following ingredients):
2 tbsp feta cheese,
2 tbsp kefalotiri cheese,
2 tbsp kasseri cheese,
half a tbsp of greek yogurt
Pepper to taste.
Filling 2: Tomato pie filling (mix well the following ingredients):
1 finely chopped medium tomato
2 tbsp feta cheese,
2 tbsp kefalotiri cheese,
2 tbsp kasseri cheese,
half a tbsp of greek yogurt,
little bit of fresh basilicum,
Pepper to taste.
Filling 3: Spanakopita filling (mix well the following ingredients):
500 gr of spinach chopped not to finely,
half of a red onion diced
2 tbsp feta cheese,
2 tbsp kefalotiri cheese,
2 tbsp kasseri cheese,
Half a tbsp of greek yogurt, some fresh dill finely chopped
Pepper to taste
