Odyssey fried potatoes
Fries, who doesn't love fries.
Personally, I feel like fries can solve any problem, and will go with any mood you are in. Happy, sad, angry, upset, scared, in love, fries simply go with everything.
Even when I don't feel like eating, which I will admit is not very often, if I see a french fry I will happily eat it and it will always improve my mood.
But sadly just as easy a fry can make my mood it can also break it, there is nothing worse than a soggy french fry.
This is a recipe that many many of you have asked for, as you might know we give cooking classes and do all sorts of dinners, and the recipe people have asked me for most sorry only second to our cheesecake recipe, is our french fry recipe.
As some of you may know I grew up in 2 countries and one of them is famous for their fries, flemish fries are the best by far, really nothing can beat them (please don’t tell my yaya).
In Culinary school one of the first classes we had was making french fries, and oh did i love it. I came home and started making fries every single day.
But none of them turned out as amazing as the ones we made in class, and I realized that was because we didn't have the same equipment at home, we didn't have a professional fryer that you could regulate the temperature with, I had no ice water ready to cool my potatoes after blanching, and all those little little details made all the difference.
So I decided to try and recreate a french fry that turned out great every single time without needing any extra equipment in the kitchen.
Then when I thought I had found it and I was ready to share the recipe with the bistro, our fantastic Roula (Roula was our morning chef for 15 years) said why do you peel the potatoes, the peel holds most the nutrients and half the fibers of the potato, and it gives a little extra crunch, and that's how our Odyssey french fry was born.

1. Place the sliced potatoes in a large bowl of cold water and let them soak for at least 5 minutes. This will remove some of the starch and help the potatoes cook more evenly.
2. Blanch your potatoes for about 5-10 min, this will ensure a perfectly crispy fried potato.
3. After the blanching, drain the potatoes and cool them down with ice water, pat them dry with a clean kitchen towel.
4. In a large skillet or frying pan, heat the oil over medium-high heat.
5. Once the oil is hot, add the potatoes to the pan in a single layer. Be careful not to overcrowd the pan, as this can prevent the potatoes from getting crispy.
6. Fry the potatoes until they are golden brown and crispy.
7. Once the potatoes are fully cooked and crispy, remove them from the pan and place them on a paper towel to drain any excess oil.
8. Serve the fried potatoes hot, garnished with herbs or spices if desired.
9. Enjoy your delicious homemade fried potatoes!
