If you know me, you know that my kitchen is a place where history and heart meet. But some of my most precious memories aren't found in history books—they are found in the flour- dusted hands of my daughter, Dora.

Ever since she was a little girl, Dora has lived and breathed the art of baking. I remember us spending hours together, side-by-side, whisking and folding, creating cakes for the bistro or sweet surprises for our friends. Watching her grow from a curious child into a talented baker has been one of the greatest joys of my life.

This Christmas, we are sharing a recipe that is a true collaboration of our love. This Meringue Christmas Wreath is what we will be enjoying with our family this year.

Meringue is a brilliant choice for Christmas, both for its practical benefits and its symbolic beauty.

Here is why this specific recipe is the "perfect" Christmas dessert:

1. The Visual Magic of a 'White Christmas'

Meringue has a naturally snowy, ethereal look. Against the crisp white of the baked sugar and the pillowy whipped cream, the pomegranate seeds look like tiny red rubies and the pistachios and mint look like emeralds. It’s a literal edible wreath that doubles as your table’s centerpiece.

Christmas dinner is usually rich and filling (especially if you are serving something like the Imperial Stuffed Quince or roasted meats). A heavy flour-based cake can often feel like "too much." Meringue Christmas Wreath (Individual Portions)

This recipe results in a large, festive wreath made of individual meringues, topped with a beautiful seasonal filling.

Ingredients

For the Meringues

4 large egg whites, at room temperature
1 cup (200g) granulated sugar
1 teaspoon cornstarch (κορν φλάουρ)
1 teaspoon white vinegar or lemon juice
1/2 teaspoon vanilla extract

For the Topping & Assembly (Wreath Filling)

2 cups (480ml) heavy cream (cold)
2 tablespoons powdered sugar
1 teaspoon vanilla extract
1 large orange, peeled and segmented (fresh)
1/2 cup pomegranate seeds (fresh)
Dried orange slices or candied orange peel (for color/texture)
Pistachios, roughly chopped (optional, for a festive green touch)
Fresh mint leaves or rosemary sprigs (for wreath decoration, outside the meringues)

Instructions

1. Prepare and Form the Wreath

1. Preheat & Prep: Preheat oven to 100ο. Line two large baking sheets with parchment paper.

2. Draw the Wreath Guide: On the parchment paper of one baking sheet, use a dinner plate (about 9-10 inches wide) and a small glass to lightly draw an inner and outer circle. This is your guide for the wreath shape.

3. Whip Meringue: Follow steps 2-5 from the previous recipe (whisk egg whites with sugar, cornstarch, and vinegar) until the meringue is stiff and glossy.

4. Pipe the Base: Transfer the meringue mixture to a piping bag fitted with a star tip (or a round tip).

5. Form the Individual Meringues: Pipe individual, slightly larger meringue rosettes (about 1.5 inches wide) onto the parchment paper, placing them side- by-side along the circle guide. They should be just touching each other to form a complete ring.

6. Create Extra: Use the second sheet to pipe smaller individual meringues as backups or extra portions.

2. Bake and Cool

1. Bake: Bake both sheets for 90 minutes.

2. Cool: Turn the oven off and leave the meringues inside to cool completely for at least 2–3 hours (or overnight) without opening the door.

3. Assemble the Wreath

1. Whip Cream: Whip the heavy cream with powdered sugar and vanilla until medium-stiff peaks form.

2. Transfer: Carefully slide the parchment paper containing the meringue ring onto your final serving platter.

3. Fill the Center: Use a spoon or spatula to carefully fill the center opening of the wreath (the space inside the inner circle) with the majority of the whipped cream.

4. Top the Meringues: Place a small dollop of whipped cream on top of each individual meringue rosette.

5. Garnish: Decorate the entire ring generously with the fresh orange segments, pomegranate seeds, and pistachios. Place some of the dried orange slices around the platter or tucked slightly into the cream for visual appeal.

4. The Final Touch

For an authentic wreath look, tuck fresh rosemary sprigs or mint leaves around the outer edge of the meringues on the platter, avoiding contact with the edible parts, to mimic pine branches.

Serving: Guests can easily pick up the individual meringues, which will have a perfect amount of cream and fruit on top!
