Lemon Mousse

Some recipes become part of a family because they are extraordinary. Others become family because they are always there.
This lemon mousse is the second kind.

It is my mother's recipe, one she has made for as long as I can remember. It has appeared on our table after Sunday lunches, at family celebrations, on warm summer evenings with friends, and whenever lemons were hanging heavy from the trees.
It is something that she would just whip up like it was nothing, It is simple, fresh, and quietly comforting —the kind of dessert that never tries too hard because it doesn't have to.

Spending summers in Greece taught me that the best meals are built around what nature is offering. We don't chase ingredients from far away when our gardens, orchards, and local producers give us everything we need. Our lemons are fragrant from the Mediterranean sun, our Greek yoghurt is thick, creamy, and full of character, and together they create something beautifully balanced.

The heart of this mousse is Greek yoghurt.
Not only does it give the dessert its rich, velvety texture, but it also brings a gentle tang that lets the fresh lemons shine. There is no need for anything complicated when the ingredients themselves are so full of flavour. That is something my mother passed on to me, and something I have come to appreciate even more as I grow older.

As I prepared this recipe recently, I found myself smiling for a different reason.
I was heavily pregnant and Standing in the kitchen, whisking together the yoghurt and fresh lemon, I realised that this wasn't just my mother's recipe anymore. It was quietly becoming mine too. I could picture two little faces one day sitting at our table, spoons in hand, tasting the same dessert that I grew up with.

Food has a wonderful way of connecting generations. Every recipe carries memories —not only of the person who first made it, but of the conversations, laughter, and moments shared around the table. My mother's lemon mousse reminds me that family traditions are often created through the smallest rituals: squeezing fresh lemons, stirring yoghurt, tasting as you go, and serving dessert while everyone is still talking long after dinner has finished.

Ingredients

500 gr greek yoghurt
300 ml heavy cream
150 gr of sugar
4 Lemons zest and juice

Instructions

1. Add all the ingredients except for the lemon juice into a mixing bowl
2. Whisk it together with the whisk extender until light and fluffy
3. When its nice and fluffed up slowly mix in the lemon juice
