Stuffed Beef Biftekia with Feta — BIFTEKIA TIS YAYAS

Some recipes are more than recipes. They carry memories, family stories, and little pieces of the people who taught us to cook. These stuffed beef biftekia with feta are one of those recipes for me.

They are simple at heart — good minced beef, creamy Greek feta, herbs, and a little patience — but there is something wonderfully special about cutting into one and finding that warm, salty feta in the middle. It is the kind of dish that feels completely familiar and yet, when made with beautiful local ingredients and a little attention to detail, becomes something truly elevated.

This is one of my dad's favourites, and knowing that makes it even more special now. My dad is soon to become a grandad, and I find myself thinking more and more about the recipes that belong to our family. The dishes that have been cooked around our table, shared after long days, and remembered not because they were complicated, but because they brought everyone together.

Greek Food is About Good Ingredients
There is something very Greek about taking a handful of humble ingredients and making them taste extraordinary. Beef, feta, olive oil, oregano, fresh mint, garlic, and herbs are not complicated. They are the flavours of home — the Greek countryside, village tables, and summer evenings.

For this recipe, I love using local beef, good Greek feta, and extra virgin olive oil. Fresh oregano or parsley adds brightness, while a little garlic brings everything together. The secret is not adding more; it is choosing better.

A Little Feta in the Middle
The feta is the heart of these biftekia. Rather than mixing it completely through the beef, we tuck a generous piece into the centre. As they cook, the feta becomes warm and wonderfully creamy while keeping its characteristic salty, tangy flavour.

When you cut into the meat, there is that little moment when the feta reveals itself. It is simple, but it feels special. That is what I love about Greek cooking: it doesn't need to be complicated to feel generous.

Family Recipes, Made for the Next Generation
There is something beautiful about cooking a family recipe when you are thinking about the next generation. One day, I hope my children will know these flavours too — the taste of good olive oil, fresh herbs, warm bread, ripe tomatoes, and feta. I hope they will remember long lunches, food shared from the middle of the table, and recipes that were never really written down because everyone simply knew how to make them.

Perhaps that is what makes a family recipe so precious. It changes slightly with every generation, but the feeling remains.

My dad has always loved these stuffed biftekia, and with him soon to become a grandad, I look at these recipes differently. They are no longer just things we cook — they are little pieces of our family history.

Keeping it Greek, But Elevating It
I like serving these biftekia with a generous Greek salad, warm pita or homemade bread, a spoonful of creamy yoghurt, and a drizzle of beautiful olive oil.

For something a little more elevated, I love adding a fresh herb yoghurt, grilled seasonal vegetables, and a few roasted tomatoes. A final sprinkle of oregano and a little crumbled feta over the top makes the whole plate feel abundant without losing its rustic character. Because elevated food doesn't have to mean complicated food. Sometimes it simply means taking something you already love and giving it the care it deserves.

A little taste of Greece. A family favourite. A recipe from my yaya for my dad. And perhaps, one day, a recipe my children will make for their grandad.

Ingredients

• 500g minced beef
• 1 egg
• 1 garlic clove, finely minced
• ½ medium onion, finely chopped
• 1 slice of stale bread (soaked in water and squeezed dry)
• Fresh or dried herbs to taste (oregano, mint, parsley)
• 100g P.D.O. feta cheese (crumbled or lightly mashed)
• Olive oil (for cooking)
• Salt and fresh black pepper to taste

Instructions

1. Prepare the bread:
Soak the bread slice in a small bowl of water until soft, then thoroughly squeeze out the excess moisture and tear it into small bits.

2. Prep the aromatics:
Finely chop the onion, garlic, parsley, mint, and oregano.

3. Combine the mix:
In a large bowl, combine the minced beef, egg, soaked bread, chopped onion, garlic, herbs, salt, and pepper. Mix well with your hands until the mixture becomes uniform and cohesive.

4. Shape and stuff:
Divide the beef mixture into equal portions. Flatten each portion into a disc, place a spoonful of feta cheese into the center, and fold the meat over the cheese. Pinch and seal the edges tightly so the feta stays enclosed while cooking.

5. Cook:
Heat a splash of olive oil in a skillet or pan over medium-high heat (or preheat a outdoor grill/BBQ). Cook the patties for 3–4 minutes per side until nicely browned and cooked through.

6. Rest and serve:
Remove the patties from the heat and let them rest for 2–3 minutes. Serve warm with crisp homemade French fries or a fresh Greek salad.
