Whipped Feta & Spicy Baked Olives — Feta, But Make It Fun
There are some ingredients that are simply part of your family.
For us, feta is one of them.
At family gatherings, there was almost always a plate of good feta somewhere on the table. Nothing complicated. Just beautiful feta, a little olive oil, plenty of oregano and perhaps some good bread alongside it.
And honestly, it didn't need anything else.
My husband, however, takes the love of feta to another level. He will add feta to almost anything you put in front of him. Breakfast? Feta. Salad? Obviously. Pasta? Why not? A meal that already contains enough cheese? Apparently, it needs feta.
So yes, feta is a big part of our everyday life.
This recipe is simply another way of enjoying it.
A little bit about our beloved feta
For anyone who doesn't know much about feta, it is one of Greece's most famous cheeses and a huge part of Greek food culture.
Traditional feta is a brined white cheese made primarily from sheep's milk, although it can also contain some goat's milk. It is aged in brine, which gives it its wonderfully salty, tangy character and unmistakable crumbly texture.
And there is something important about feta: good feta doesn't need much help.
When you have a really beautiful piece, you can put it on a plate, drizzle it with excellent olive oil, sprinkle it with some oregano and you have something absolutely delicious.
That is very much how we like to eat.
Good ingredients. Simple preparation. Lots of flavour.
But sometimes, we like to have fun with it
Whipped feta — or what we sometimes call feta mousse — is one of those recipes that isn't trying to reinvent the wheel.
We're still eating feta.
We're just changing the texture.
By whipping the feta, we turn something crumbly and firm into something smooth, creamy and incredibly spreadable. Suddenly it can become a dip, a spread, the base of a plate or something delicious to scoop up with warm bread.
And that's what I love about it.
It takes something so familiar and gives it a completely different personality.
For this particular recipe, we decided to make it even more fun by pairing it with spicy baked olives.
So really, you are getting two recipes in one.
Creamy, salty whipped feta alongside warm olives baked with spice, olive oil and all those beautiful Mediterranean flavours.
It is the kind of food we love to put in the middle of the table.
Everyone reaches in.
Someone takes a little too much.
Someone asks for more bread.
And before you know it, the bowl is empty.
Why we made it
There wasn't really a special occasion.
And that's exactly the point.
We made this simply because we felt like it.
Not every recipe needs a celebration, a complicated story or a reason.
Sometimes you open the fridge, see a beautiful piece of feta, look at some olives and think, “Let’s make something delicious.”
I think that is one of the nicest things about Greek food.
So much of it comes from having good ingredients around you and knowing how to turn them into something wonderful without making life complicated.
Our whipped feta is exactly that.
It is easy.
It is fun.
It is delicious.
And it gives us another excuse to eat feta.
As if we needed one.
Good feta. Good olive oil. Good olives. Good bread. Good people around the table.
The rest is just having a little fun.
