Chocolate Mousse With Orange Marmalade

Some of our guests at Odyssey have visited us many times and keep coming back, like the Dutch family van Diesen. Pieter, his wife Elise and their children Willem and Jolijn have become great friends. When they stayed at Odyssey in April they followed a cooking lesson in which we made this super delicious chocolate mousse with orange marmalade.

The van Diesen family has been coming to Poros since 2010 and immediately felt at home. They are all inspired by the island, but Pieter (51) in a very special way. Pieter is a poet and a philosopher and likes to put his love for Poros into words. Beautiful words that we are both happy to share with you.

Pieter started writing the way most people do: At school. Immediately he was captivated by the power of words. He became older – a student, lover, friend, man, guitar player, singer, Logistics engineer, philosopher, father, wiser, depressed, fanatical, occupational health expert, football player and teacher – roughly in that order.

Inspiration to write

He always felt inspired to write. Pieter takes poetic freedom seriously, but not too much. His poems tend to relativise. They show relations in a way that makes life bearable and sometimes even funny. Sometimes his poems are painful observations of the dark side of life. Coming closer to him than reading his poems is not possible.

Making Chocolate Mousse With Orange Marmalade

Let us show you how we made the chocolate mousse with orange marmalade! The son was not there during this cooking class, daughter Jolijn in this picture is cooking with her boyfriend. They are melting the pieces of chocolate with the cream and create a rich creamy mixture.


Pieter continues and stirs the chocolate mousse, in the meantime we whip the remaining cream to stiff peaks.


We add the zest of the orange to the chocolate mousse, stir it some more and let it cool.


When the chocolate mousse is cooled, we spoon it into small glasses and put the whipped cream on top.


To finish, we add the orange marmalade. Of course you can use any decoration you like. A great idea is to decorate the chocolate mousse with edible flowers for a beautiful and refreshing presentation!

Ingredients

250 ml cream
130 grams good quality dark chocolate
Zest of one orange
Orange marmalade (or any decoration you like, for example edible flowers).

Instructions

1. Ιn a bowl over simmering water, melt the pieces of chocolate with 100 ml of cream.
2. Stir frequently until you get a rich creamy mixture.
3. While the chocolate cream mixture is melting, whip the remaining cream to stiff peaks.
4. Once the chocolate cream mixture is fully melted, take the bowl off the heat, add the zest of the orange, stir and let it cool.
5. When the chocolate mousse is cooled, spoon it into 4 small bowls or glasses.
6. Put the whipped cream on top of that in each glass.
7. To finish, add the orange marmalade – or any decoration you like - on top. A great idea is to decorate the chocolate mousse with edible flowers, for a beautiful and refreshing presentation.
8. Chill until serving.
